Is Toubkal doable in two days for a beginner?

Yes, a reasonably fit beginner can climb Toubkal in two days in summer, following the standard route with a guide — day one is the trek from Imlil to the refuge at around 3,200 m, and day two is a pre-dawn summit push and descent. It’s long and hard but non-technical in good conditions.

The main challenges are the sustained uphill, the altitude (which can cause headaches and breathlessness), and an early, cold start on summit morning. You don’t need climbing skills in summer, but you do need stamina and to walk at a steady pace to acclimatise.

A mule can carry your bags to the refuge, which helps a lot. Outside summer, snow and ice raise the difficulty sharply and it’s no longer a beginner outing, so aim for late spring to early autumn.
